It’s time for another one of my quick dinner recipes! This one is simple and easy to prepare, and it even includes a few fresh veggies to make it healthier. You’ll need:
- 1 pound pre-cooked shrimp (frozen)
- 1 pound angel hair pasta (that’s the standard size box)
- 1 can cream of shrimp spoup
- 1 cup celery – diced
- 1/2 cup carrots – shredded
- 1/2 cup green onion – chopped
- 1/4 teaspoon red pepper flakes
- 3 tablespoons butter
- 2 teaspoons paprika
- 1/2 cup water
- 1 can chow mein noodles (5 oz can)
First, thaw the shrimp – overnight in the fridge or under cold water in the sink. Next, start water boiling and cook the pasta while completing the rest of the recipe.
In a non-stick skillet, melt the butter over medium-high heat. Once the butter is melted add in the celery, carrots, and onions and cook them for about 5 minutes. Then add the soup, water, shrimp, pepper and paprika. Stir occasionally and cook for about another 5 minutes on medium heat.
Remove from heat and serve over the pasta. Sprinkle in chow mein noodles to add a little bit of crunch. This meal should give you 4-6 servings.
If cream of shrimp soup is hard to find in your area, try using cream of celery soup and the seasoning packet from a package of shrimp flavored ramen noodles.
