Easy Beans and Rice

Hello!  I’ve been travelling for work again, so sorry for the lack of quick dinner recipes posted lately.  Because I haven’t been to the grocery store in a while, my pantry was pretty bare when i returned this weekend.  Thankfully, this great recipe only requires a few simple ingredients, all of which were among those I had on had.  This recipe is so simple that you won’t believe how great it is until you try it!  To get started, you’ll need:

  • 1/2 lb. of lean ground beef
  • 1 can of black beans, drained
  • 1 can of Rotel milder tomatoes
  • 1 bag of boil-in-bag rice
  • Sour cream

Begin by filling a pot with water and bringing it to a boil on the back burner.  Once the water is boiling, cook the rice according to its instructions.  On the front burner, brown the ground beef in a large saucepan.

Once the beef is browned, drain away the fat, then add in the beans and Rotel tomatoes.  Mix it all together well and serve over the rice (which you’ve cooked, drained, and served out while the beef was browning).

Top it off with sour cream.  If you’re interested in spicing things up a bit, try also adding your favorite salsa to the mix, or topping it with some guacamole as well.

Also, you can easily make this into a to-go meal with a couple of large tortillas – burritos!
