Country Breaded Pork Chops

Sorry that I haven’t posted any quick dinner recipes in a while.  Here’s a great one that I came across over at the Hillbilly Housewife for some tasty breaded pork chops that you can prepare in minutes.  To start, you’ll need:

  • 4 boneless pork chops
  • 1/4 teaspoon dried thyme leave
  • 2 teaspoons orange juice
  • 1 tablespoon Dijon style mustard
  • 1/2 cup cornflakes crumbs

First, preheat your oven to 425°.  Next, take your favorite brand of cornflakes and pour some into a ziplock bag.  Seal the bag and lay it on the kitchen counter.  Use your fist to pound the bag until the flakes have become about the consistency of the crumbs you expect to find at the very bottom of the cereal box.  Repeat this as necessary until you have at least 1/2 cup of the cornflakes crumbs, and then pour the crumbs into a shallow dish or bowl.

Now, in another shallow dish or bowl, mix the mustard, orange juice and thyme.  Dip the pork chops into the orange juice mixture (or use a spoon or brush to spread it over the chops if necessary), then dip both sides of the meat into the cornflake crumbs.  Make sure the chops are evenly coated by both the orange juice mixture and the crumbs.

Bake the pork chops for 20-25 minutes or until they are no longer pink in the center.  Serve with your favorite sides.
