Sounds good, think I would substitute salsa for the tomatoes which would give it a bit more of a Mexican flavor. And maybe Jack cheese mixed with the cheeder. Besides casseroles, I like stir fries and quick pasta's. Sometimes those are even faster than doing the fast food thing. I rarely do that for dinner, once in awhile for lunch.
