Chicken Dijon

Here’s is another quick dinner recipe using chicken (can you tell that I love chicken yet??).  You should be able to prepare this simple and easy meal in under 30 minutes.  You’ll need:

  • 2 boneless chicken breasts
  • 1/4 cup of finely chopped onion
  • 1 cup of chicken broth
  • 2 tablespoons of Dijon mustard
  • 1 tablespoon of flour

To start, pound the chicken breasts into about a 1/4 inch thickness.  Then, spray cooking spray (e.g. Pam) into a large non-stick skillet and saute the chicken and onions over medium heat.  You should only saute the chicken for about 2 minutes per side or until they are golden brown.

Wisk together the remaining ingredients and pour them over the chiken in the skillet.  Cover the skillet and let simmer on low heat for about 10 minutes.  Then remove from the heat and serve!

Throw in a side salad or your favorite vegetable and your meal is complete.
