For my first post on this blog, I thought I’d start with one of my favorite quick dinner recipes. This recipe is extremely simple and easy to prepare and is very tasty! If you’re cooking for one like I am, you’ll find that there is plenty leftover for another night or tomorrow’s lunch. You’ll need:
- Casserole dish (at least 9″ x 13″)
- 1 stick of butter
- 1 can of cream of chicken soup
- 1 can of French onion soup
- 1 cup of rice
- 1 cup of water
- 1 pound of boneless, skinless chicken (I prefer the tenderloins, but breasts work fine as well)
Start by placing the stick of butter in the casserole dish. Place the dish in the oven and begin preheating the oven to 350°. As the oven warms up and the butter melts, gather your remaining ingredients. You want the butter to be completely melted before you continue.
Once the butter has melted, carefully remove the dish from the oven. Add in the cup of rice and the cup of water. Mix it all around so that the rice is evenly distributed in the dish. Add the chicken to the dish, arranging it so that overlap is minimized. Finally, add in the French onion and cream of chicken soups. Cover the dish and bake for 1 hour.
The total time from start to finish for this meal should be about 1 hour and 15 minutes.
